San Diegan wins Spam competition

San Diegan Stacy Slagor beat out 800 cooks to win the “Great American SPAM® Championship” with her recipe for Spam fajitas. Yeah, that’s kinda gross, but also kinda cool too. San Diego has a substantial Pacific Islander population for whom Spam is, if not a staple, then a comfort food.
And Slagor’s recipe definitely has Hawaiian elements, including a pineapple-teriyaki “salsa.”
Spam Fusion Fajitas
FOR SALSA:
1 (20-ounce) can crushed pineapple in juice, drained
1 (4-ounce) can diced jalapenos, drained
1/4 cup sliced green onions
1/4 cup chopped cilantro
1/4 cup teriyaki sauceFOR FAJITAS:
2 tablespoons olive oil
1 medium yellow onion, sliced into thin wedges
1 large red bell pepper, cut into thin strips
1 (12-ounce) can SPAM Classic, cut into 1/4-inch thick strips
8 fajita-size flour tortillas, warmedCooking Directions: In medium bowl, combine all salsa ingredients; set aside. Heat olive oil in a large skillet over medium-high heat. Add onion and bell peppers. Saute for 5-8 minutes or until lightly browned and softened; remove from skillet and set aside. In same skillet, add SPAM Classic and fry until lightly browned, about 5 minutes. Return onions and peppers to skillet and stir to combine with the SPAM Classic. Spoon SPAM mixture onto flour tortillas. Top with salsa! Serves 4-6.
Slagor declined the $3,000 cash prize and is instead attending the Waikiki SPAM JAM® Festival, with all expenses paid by Hormel Foods, the owners of the Spam Brand.
MMMMMMMM Mystery meat in a can just like we had at school! I still to this day can’t get over how many people actually eat this crap. This is the reason Ramen noodles, lima beans and Hungarian goulash are still in existence….

I used to LOVE me some Ramen noodles. Then I spent 4 years in some of Wisconsin’s finest charm schools and can’t stand the sight of a package.

I love food and I’m a big eater. Spam I can tolerate, but Lima Beans are one of the few foods I will not touch, not with a 10 foot fork!
